Surrey pub finds quality Precision refrigeration equipment the perfect complement to their kitchen

On the edge of the historic Windsor Great Park lies a quintessentially British pub, run by husband and wife team Steven and Ami Ellis. The Bailiwick Free House offers familiar dishes with a sophisticated twist thanks to Steven’s training under the tutelage of Clare Smyth at Restaurant Gordon Ramsay, and Ami’s credentials as a pastry chef mean you definitely won’t want to skip dessert. Taking advantage of the very best local produce, exceptional game and ingredients from The Windsor Great Park and Royal Farms, it’s no surprise that their classic country pub comes Michelin recommended.

Working with Clive Groom at CNG, Steven and Ami were able to create a kitchen that flows and works really well for their everyday needs. “[Clive] understands the style that we’re after… [and] something he’s really good at [is] you give him a budget; you give him a layout and he can work within those restraints.”

Choosing Precision Refrigeration

Speaking to Precision’s Senior Accounts Manager, Kandie Rose, Steven explained that “the most important thing about refrigeration… [is] the reliability of it, the longevity of it, the sustainability and efficiency of it… I’d rather pay for quality… I’m happy to pay for quality and I’ve found that within Precision.

Steven is a big fan of the PCF40 Blast Chiller/Freezer, he said “I’ve used quite a few in the past and what I really favour about the one from Precision is the speed in which it can chill something down.” Available in under counter and reach-in models, with capacities ranging from 15 kg to 50 kg, Precision can take your product from +90 to 3ºC in 90 minutes, or from +90 to -18ºC in 240 minutes.

In the pastry section, Ami has double stacked Variable Temperature Drawers (VUBC121-2) which she finds “incredible.” She explains, “They’re easy to clean, they’re nice and spacious, and because the drawers are variable temperature, I have the top drawer set at -13ºC so all my parfaits and ice-creams… are kept nice and soft... And then the bottom drawer is kept very cold. Having that colder bottom drawer is perfect.” Our variable temperature drawers are designed to provide flexible refrigerated or freezer storage at the flick of a switch. The large GN 2/1 drawer provides bulk storage in the heart of the kitchen… exactly where it’s needed.

Other units in the kitchen include MCU211-UDT Counter Refrigerators with doors and banks of three drawers, these are “incredibly useful and helpful.” The drawers allow Ami to “separate small garnishes for each dish” whereas the door sections are perfect to “keep gastro trays that fit very nicely… and have all [her] pastries layered in. They’re easily accessible and [kept] nice and cool.” When space is at a premium, and preparation workspace is required, a Precision refrigerated counter provides a practical, flexible, and cost-effective solution.
